Aloo Samosa Recipe: Samosa is one of the famous street foods of India. The outer layer of samosa is crispy and inside it is stuffed with a mixture of potatoes and peas and then deep fried. Making samosa at home is quite easy. You can serve samosa with mint chutney or tamarind chutney.
Ingredients
For the dough:
- 2 cups all-purpose flour
- ¼ tsp ajwain
- ½ tsp salt
- ¼ cup oil
- ½ cup water
For the stuffing:
- 2 tsp oil
- 1 tsp cumin seeds
- ½ tsp coriander, crushed
- ½ tsp fennel seeds
- Pinch asafoetida
- 1 inch ginger, finely chopped
- 1 chilli, finely chopped
- ½ cup peas
- ½ tsp Kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- ½ tsp mango powder
- ½ tsp garam masala
- ¾ tsp salt
- 4 potatoes, boiled and mashed
- 2 tbsp coriander leaves, finely chopped
Other ingredients:
- Water, to seal the samosas
- Oil, to fry
Preparing the stuffing for the samosas:
- First, take 2 tsp oil in a large pan and heat 1 tsp oil. Add cumin seeds, ½ tsp coriander seeds, ½ tsp fennel seeds and a pinch of asafoetida and saute lightly.
- Also add 1 inch finely chopped ginger and 1 chilli.
- Now add ½ cup peas and saute lightly for 2 minutes. I have used frozen peas here. If you use soaked peas, do not forget to boil the peas.
- Also, add ½ tsp chili powder, ½ tsp coriander powder, ¼ tsp cumin powder, ½ tsp dry mango powder, ½ tsp garam masala, ¼ tsp black pepper and ¾ tsp salt.
- Now saute on low flame till the spices become aromatic.
- Then, add 4 boiled and mashed potatoes to it. I have boiled potatoes in a pressure cooker, which I boiled till 5 whistles.
- Keep mashing and mixing till the spices are well combined.
- Now add 2 tbsp coriander to it.
- Mix it well and the samosa filling is ready. Now let it cool completely.
Preparing the samosa dough:
- Firstly, take 2 cups of refined flour in a large bowl. You can substitute wheat flour.
- Now add ¼ tbsp carom seeds, ½ tbsp salt and mix well.
- Now add ¼ cup oil and knead the flour well. Do not be stingy in adding oil as it is very important to make the samosa flaky.
- Now mix it well and make sure that the dough starts taking shape.
- Add ½ cup water to it and start kneading the dough.
- Knead a stiff dough by adding water as needed.
- Now apply oil to the dough and cover it for 10 minutes.
Now let’s come to the samosa recipe. Knead the dough for 2 to 3 minutes to make it smooth. Divide the dough into 3 equal parts. Take one dough ball and roll it to make a roti. Cut it into 2 semi-circles. Take one semi-circle and fold it to make a cone. Fill it with the stuffing. Seal the edges properly by applying water. Place the samosas on a plate.
Deep fry in hot oil till golden brown and serve with mint or tamarind chutney.
